As far as the steel-cut oats, I'd recommend using whole buckwheat or whole millet. You could also experiment with using additional nuts, seeds, or coarsely-ground grains in place of some of the oats. Just make sure to keep an eye on the dough consistency, since different ingredients may absorb more or less water than oats...don't worry if it seems a little too wet, but do add more water if it seems too stiff.<br />Hope that helps!
